This broccoli and cheese lover's egg scramble is one of the easiest ways to get that combination together in a hurry. If you're a broccoli and cheese lover, then you will love this tasty broccoli and cheddar egg scramble recipe. Diced broccoli is combined with tasty eggs then mixed with white cheddar cheese to make a satisfying meal you can enjoy any time of day.

This gluten-free egg dish is extra flavorful – thanks to the addition of garlic powder and oregano. The eggs are cooked in extra virgin olive oil, which is part of a heart-healthy Mediterranean diet that promotes health and wellness.

Here are the six ingredients you need to make these cheesy scrambled eggs: extra virgin olive oil, eggs, cooked broccoli, garlic powder, oregano and diced cheddar cheese. The lemon juice is optional, but especially tasty if you are sautéing broccoli for this recipe (see Recipe Notes). This hearty breakfast comes together in only about 10 minutes, making it an easy way to jumpstart your day.

  • I had some easy baked broccoli ready to go for this recipe, which was incredibly flavorful. You can prepare your broccoli the same way. Alternatively, you can simply steam it for about 4 minutes in the microwave (place broccoli in a microwave-safe bowl covered with a damp paper towel and microwave until crisp-tender). Or, you can simply sauté the broccoli in the olive oil along with the optional lemon juice for a couple of minutes before adding the egg mixture.
  • Instead of oregano, you can try different seasoning blends, such as Mediterranean seasoning or Italian herb seasoning.
  • If you don't have white cheddar cheese, regular cheddar is equally delicious.
  • Store leftover eggs in an airtight container in the refrigerator.

Here's how to make it:

  1. To a large mixing bowl, add the eggs. Add the oregano and garlic powder, and season with salt and pepper, if desired. Whisk until blended.
  2. Add the olive oil to a nonstick skillet over medium heat. Add the broccoli to the skillet and sauté until heated through, about a minute. (If you're cooking raw broccoli, sauté in olive oil and lemon juice until crisp-tender.)
  3. Pour the egg mixture into the pan and stir to combine with the broccoli. Using a wooden spoon or spatula, scramble the eggs until they are about halfway done, about 2 minutes.
  4. Add the cheddar cheese to the eggs and continue to scramble until eggs are done to your preference and cheese is melted, about 2 minutes.
  5. Serve eggs on their own, or with a bagel, English muffin or toast.
