Lemon Lovers Egg Sandwich Recipe: Fluffy Mediterranean Scrambled Eggs In 10 Minutes

I try to incorporate the Mediterranean Diet into much of my cooking, including breakfast. I love the flavors as well as the health benefits of Mediterranean foods. I also love fresh lemon and, fortunately for me, lemon features prominently in Mediterranean recipes.

If you're a lemon lover like me, then you will love this Mediterranean scrambled eggs recipe. Lemon juice makes the eggs extra fluffy, and these tasty eggs are perfect for making a lemon lover's egg sandwich. The gluten-free eggs are creamy, fluffy and flavorful – thanks to the addition of fresh lemon juice and Mediterranean herbs. Plus, cooking them in olive oil is part of a heart-healthy Mediterranean diet that promotes health and longevity.

Here are the low-sodium ingredients you need to make these Mediterranean lemon scrambled eggs: eggs, lemon juice, garlic powder and Mediterranean or Italian herb seasoning. The shredded Parmesan cheese is optional (but delicious).

This refreshing breakfast comes together in only about 10 minutes, making it an easy way to jumpstart your day nutritiously and deliciously. I served these eggs for breakfast on a toasted gluten-free bagel along with my latest Trader Joe's discovery: Everything But the Bagel Greek Yogurt Dip (see Recipe Notes).   • I prefer to squeeze my own fresh lemon juice, but you can use bottled in a pinch. You can use more or less lemon juice, depending on how much lemon flavor you want.
  • You can try different fresh or dried herbs in your eggs, such as dill, thyme, basil, oregano or a blend such as Greek seasoning.
  • You can spread a layer of cream cheese on your bagel or toast before placing the eggs. I made a delicious discovery at Trader Joe's: Everything But the Bagel Greek Yogurt Dip. I spread a layer of that low-calorie dip on my bagel before topping it with the eggs. So good!
  • You can top your egg sandwich with avocado or tomato slices, if desired.
  • Store leftover eggs in an airtight container in the refrigerator.

Here's how to make it:

  1. Crack the eggs into a large mixing bowl. Add the garlic powder and herb seasoning, and season with salt and pepper, if desired. Add the lemon juice and whisk until blended.
  2. Add the olive oil to a nonstick skillet over medium heat. Pour in the egg mixture. Using a wooden spoon or spatula, scramble the eggs until they are done to your preference. They will be creamy.
  3. If using the Parmesan cheese, add it halfway during cooking time. Stir to incorporate as you scramble the eggs.
  4. Remove eggs from heat.
  5. Serve eggs on their own, or on top of a bagel or toast as an egg sandwich.
