Easy 4-Ingredient Grilled Broccoli Recipe With Lemon & Parmesan by Jan Mostrom
This grilled lemon broccoli is so easy because you steam the broccoli before you place it on the grill. The whole thing is done in 20 minutes and has me looking forward to summer and more grilling opportunities! Not only that, but you get the health benefits of broccoli and the health benefits of lemon in this tasty vegetable side dish!
To make these grilled vegetables, you will need just four simple ingredients. Here is your short shopping list: fresh broccoli, olive oil, fresh lemons and Parmesan cheese. The broccoli is quickly cooked in the microwave until crisp-tender, then grilled along with the lemons. Top with some freshly grated Parmesan cheese and you have a winning gluten-free side dish.

- olive oil or other cooking oil of your choice
- 1 - 2 lemons
- freshly grated Parmesan cheese (about 1/3 cup, but you decide)

- You could add some seasoning to the broccoli like Mediterranean seasoning, Italian seasoning or Greek seasoning.
- Store any leftover broccoli in an airtight container in the fridge for up to four days.
Here's how to make it:
- Slice your broccoli heads into large pieces with flat sides. Place them into a large microwave-safe bowl filled halfway with water. Cook on high for 4 to 5 minutes, or until the broccoli is firm tender.
- While the broccoli is cooking, turn the grill on high and slice your lemons in half. When microwave finishes cooking, place the pieces of broccoli on the grill with the lemon halves.
- Grill for 1 to 2 minutes per side, or until they have a nice char. Remove from the grill to a serving platter.
- Squeeze with a bit of lemon juice and sprinkle with Parmesan cheese.
