Chicken salad is one of my favorite things to make for lunch – and sometimes dinner. I don't wait until I have leftover chicken to whip up a batch of homemade chicken salad. Rotisserie chickens make it easy to get enough shredded chicken without having to turn on the stove or oven. This creamy, smoky chicken salad has just the right amount of smokiness and flavor from the seasonings added. It's a delicious, filling lunch or light dinner.
To make this creamy chicken salad you will need cooked, shredded chicken, mayonnaise, Liquid Smoke, celery, green onions, garlic powder, onion powder, smoked paprika (even more smoky flavor!) and optional ground cayenne for a little kick.
Liquid Smoke is a natural wood flavor in liquid form that adds a smoky taste to food, especially meats. But after tasting this smoky chicken salad recipe, I'll be grabbing the bottle of Liquid Smoke more often. It adds a smoky, rich flavor that usually you can only get by firing up a smoker or barbecue grill.
This luscious chicken salad can be piled onto bread for sandwiches, spooned into tortillas for wraps or served on top of salad greens. I piled mine on top of baby arugula with a few cherry tomatoes on the side for lunch. Delicious! How will you eat it?

Ingredients
- 3 cups shredded chicken
- 1/2 cup mayonnaise
- 1/2 - 1 teaspoon Liquid Smoke
- 2 ribs celery, chopped small
- 3 green onions, chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon smoked paprika
- ground cayenne, to taste (optional)

Recipe Notes
- One rotisserie chicken yields about 3 cups of meat, which is just the right amount for this recipe. You could also cook chicken breasts and/or thighs, cool and shred.
- You could add mustard to this chicken salad. Yellow mustard, whole-grain mustard or Dijon mustard would be good choices. If you can find a specialty smoky mustard, that would be even better!
- Start with 1/2 teaspoon of Liquid Smoke and taste before adding more. You can always add more but not take it out. It is a strong flavor. I used hickory flavor.
- Store the chicken salad in an airtight container in the fridge.
Here's how to make it:
- Put all the ingredients into a mixing bowl.
- Mix well.
- Taste and add more Liquid Smoke, seasonings, salt and black pepper, to taste.
- Serve as a sandwich filling, wrap filling or alone on top of salad greens.
