Ingredients
- 2 bunches broccoli, chopped
- 2 tablespoons olive oil
- 1 1/2 tablespoons balsamic vinegar
- juice of 1 lemon (about 2 to 3 tablespoons)
- 1 tablespoon Greek seasoning or Mediterranean seasoning
- 1/4 teaspoon dried oregano
- 1/4 teaspoon garlic powder

- You can use Greek, Mediterranean or even Italian seasoning in a pinch.
- I prefer to use fresh lemon juice, but you can use bottled lemon juice if needed.
- Store leftovers in an airtight container in the refrigerator.
Here's how to make it:
- In a large mixing bowl, combine olive oil, balsamic vinegar, lemon juice, Greek or Mediterranean seasoning, garlic powder and oregano. Whisk to combine.
- Add broccoli to the mixing bowl and stir to coat the broccoli in the mixture. Pour the broccoli into an 8x8-inch baking pan or casserole dish. Season with salt and pepper, if desired.
- Bake at 375 degrees F for about 30 minutes, stirring after 15 minutes, until broccoli is crisp-tender.
