- 1 cup black rice, rinsed (uncooked)
- 1 3/4 cups water
- 1 teaspoon olive oil

- Add a squirt of fresh lemon to the cooked rice for a little brightness.

Here's how to make it:
- Combine the rice, olive oil and water in a saucepot. Bring to a boil, reduce heat to low, cover and simmer for about 30 minutes.
- Remove the pot from the heat and let it sit, covered, for about 10 minutes. Fluff and serve.
