Farmhouse Fresh Stuffed Bell Peppers Recipe for Meatless Monday

To make this easy stuffed pepper recipe you will need just a few simple, healthy ingredients. Here is your short shopping list: bell peppers, olive oil, salt, black pepper, eggs, cheddar cheese and optional dried cilantro for serving.

Ingredients

  • 2 bell peppers, any color
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt (divided)
  • 1/4 teaspoon ground black pepper (divided)
  • 4 large eggs
  • 1/4 cup shredded cheddar cheese
  • 1 tablespoon dried cilantro, for garnish (optional)

  • After baking, try to keep the pepper halves level so that when you crack the egg, it doesn’t run out.
  • Add spices like garlic or red pepper for extra flavor.
  • Diced onion is another good addition.
  • Use any kind of cheese you like.

Here’s how to make it:

  • Cut bell peppers in half and remove the ribs and seeds.
  • Place the peppers on a greased baking sheet, cut side up. Drizzle with olive oil and sprinkle with half of the salt and pepper. In a preheated 400-degree F oven, bake the peppers for 15 minutes. They will start to brown around the edges.
  • Remove the baking sheet from the oven and carefully crack 1 egg into each pepper half. Keep the halves as level as possible so the egg doesn’t spill onto the pan.
  • Season with the remaining salt and pepper and then top with a sprinkle of cheese.
  • Bake until the egg whites are set, about 15 minutes. Sprinkle with cilantro, if desired.
