I decided to out-creamy and out-tangy those other egg salad recipes. Plus, I added lots of fresh celery to up the crunch factor. The result is this super creamy lemon Dijon egg salad recipe that makes your mouth water.
This easy gluten-free egg salad recipe is so simple to make and requires only six ingredients: hard-boiled eggs, mayonnaise, lemon juice, Dijon mustard, celery and fresh parsley. The smoked paprika is optional, but adds even more flavor to this deliciously crunchy egg salad recipe. You mix up all the ingredients and it's ready in only about 10 minutes.
Serve this extra-creamy egg salad recipe for lunch or for dinner on its own, with crackers or fresh vegetables, or as a sandwich on your favorite bread. I served it on whole wheat toast and English muffins and it was the perfect lunch (and a great way to use up leftover Easter eggs)!

Recipe Notes
- I like to squeeze my own fresh lemon juice, but you could use bottled lemon juice in a pinch.
- If you'd like a little less Dijon flavor, use 3 teaspoons of mustard instead of 4 teaspoons.
- Store leftover salad in an airtight container in the refrigerator.

- In a large mixing bowl, combine the diced eggs with the rest of the ingredients. Season with salt and pepper, to taste, if desired.
- Stir all ingredients until thoroughly combined and creamy all over.
- Serve immediately or refrigerate until ready to serve.
