One-Pan Ground Beef Broccoli Stir-fry Recipe Is Dinner In 25 Minutes

My freezer is full of ground beef, so I'm always looking for new ground beef recipes. We love Asian beef broccoli, so it was a no-brainer to make this quick and easy ground beef broccoli stir-fry recipe. The budget recipe has minimal prep and cooks up in no time in one pan. Dinner perfection!

To make this easy stir-fry recipe you need ingredients that are probably already in your fridge and pantry. Here is your short shopping list: cooking oil, fresh broccoli, onion, ground beef, low-sodium soy sauce, brown sugar, cornstarch, garlic, fresh ginger and rice vinegar.

The broccoli and ground beef are coated in a slightly sweet brown sauce that's full of Asian flavors. Serve this beef broccoli over white rice, brown rice, jasmine rice, quinoa, noodles or whatever you'd like. You could even eat it as-in with crispy eggrolls on the side.

Ingredients

  • 1 tablespoon cooking oil 
  • 4 - 5 cups broccoli florets
  • 1 small onion, sliced (optional)
  • 1 pound lean ground beef

Sauce

  • 1 cup water
  • 6 tablespoons low-sodium soy sauce
  • 3 tablespoons brown sugar, packed
  • 1 tablespoon cornstarch
  • 4 cloves garlic, minced or pressed
  • 1 tablespoon minced fresh ginger (see Recipe Notes)
  • 2 teaspoons rice vinegar

  • Try this recipe with ground turkey or ground chicken instead of ground beef.
  • When I first saw how much sauce was poured into the pan, I decided next time I'd reduce it to 3/4 cup. My husband loved how "juicy" this dish was, so I will leave it at 1 cup.
  • If you like softer broccoli, add about 1 tablespoon of water when cooking the broccoli to help it soften faster.
  • For a little spice, add in some crushed red pepper flakes.
  • I used olive oil, but you could use sesame oil for even more flavor.
  • Store any leftovers in an airtight container in the fridge for up to three days.

Here's how to make it: 

  1. Whisk together all the sauce ingredients. Set aside.
  2. Heat the cooking oil in a large skillet. Add the broccoli and onion, if using, and cook, stirring often, until crisp-tender or desired tenderness, about 5 to 7 minutes. Remove to a plate.
  3. Add the ground beef to skillet and cook until browned and cooked through. Season with a little salt and pepper, if desired. 
  4. Pour in the sauce.
  5. Cook until the sauce starts to thicken, about 3 minutes.
  6. Add the broccoli back into the pan.
  7. Stir to combine.
  8. Serve over rice, noodles or your favorite grain, if desired.

I don't use refined sugar... could I substitute honey for the brown sugar?

I don't see why not. It may change the consistency a bit, but honey would be a good substitute.
