Easy Everything Bagel Hamburger Buns Recipe Is Weekend Baking Therapy by Chef Gigi
Burgers are the ultimate comfort food. There's nothing like a juicy ground beef, chicken or turkey burger with all the toppings to put a smile on your face. We're always concerned about the burger patties, toppings and burger sauces, but not many mention the buns. After you make these homemade everything bagel hamburger buns, I'm betting that changes!
These homemade burger buns are not hard to make at all. Here is what you need to gather to start on a batch: bread flour, butter, eggs (for the dough and an egg wash), granulated sugar, salt, instant dry yeast and everything seasoning.
Bagel seasoning, sometimes called everything seasoning, is usually a combination of poppy seeds, sesame seeds, dried garlic, dried onion and salt. You can easily make your own homemade everything bagel seasoning or buy it premade on the spice aisle.
Use these soft buns for all your favorite burger recipes. You can also just slather them with butter and serve them as a side dish with dinner or for sandwich night with your favorite sandwich fillings.

Ingredients
- 3 1/2 cups bread flour
- 1/2 - 3/4 cup lukewarm water (not to exceed 110 degrees F)
- 2 tablespoons butter, at room temperature
- 1 large egg
- 1/4 cup granulated sugar
- 2 teaspoons salt
- 1 tablespoon instant dry yeast
- egg wash (1 large egg and 1 tablespoon cold water)
- everything bagel seasoning

Recipe Notes
- This recipe makes eight large buns. For smaller buns, divide the dough into 12 pieces instead of eight. Reduce bake time to 12 to 15 minutes. To make 3-inch slider buns, divide the dough into 24 pieces and bake for 11 to 12 minutes or until done.
- Instead of everything bagel seasoning, you could use poppy seeds or sesame seeds. Black, white or a combination would work well.
- You could leave off the everything bagel seasoning for plain buns.
- Store the buns in an airtight container on the counter.
Here's how to make it:
- Combine all the ingredients except the egg wash and seed topping into the bowl of your stand mixer. Fitted with a dough hook, knead the ingredients until they come together and form a silky texture, about 8 minutes. Start with a lower volume of water and increase it if the dough looks too still to mix. Once combined, Cover the dough well with plastic wrap, then a clean kitchen towel and place it in a warm area in your kitchen. Allow it to rise until doubled in bulk, about 1 hour or more. To speed things up, I heat my oven to 200 degrees F, turn it off and then keep the door cracked.
- Gently deflate the dough by turning it out onto a clean work surface. Divide it into eight pieces, about 80 to 100g each. Shape each piece into a ball by rolling the pieces one at a time in a circular motion with your palms cupped against the dough and resting on the work surface. Place onto a lined baking sheet and firmly press to flatten each dough ball with the palm of your hand until it's about 3 1/2 inches in diameter. Cover and let rise again until noticeably puffy, about another hour. Toward the end of the rising time, preheat the oven to 375 degrees F.
- Make the egg wash by mixing the water and egg together in a small bowl. Gently brush the top of the buns with egg wash, mindful not to deflate. To make seeded buns, sprinkle buns with the seeds of your choice after the egg wash.
- Bake for 15 to 18 minutes or until lightly golden. Cool the buns on a rack before slicing them horizontally with a serrated knife.
