After a recent health scare, my husband and I have doubled down on our efforts to eat healthier – low to no salt, low fat, lots of vegetables. This curried lentil salad recipe appeared in my inbox and looked like it would fit our new parameters, especially if we left out the salt.
Not only is this 10-minute, no-cook curried lentil salad recipe full of flavor, it's healthy, too! Lentils are a nutrient-rich ingredient with many health benefits. Lentils are high in fiber, protein and other vitamins.
Lentils are the main stars of this salad recipe, along with red onion, red pepper, dried cranberries, lemon juice and zest, and a host of spices including curry and cumin. It comes together in 10 minutes or less (unless you choose to use cooked lentils rather than canned).

- 1/2 cup diced red onion
- 1/3 cup diced red peppers
- 1/4 cup chopped fresh cilantro or parsley
- 1/4 cup chopped fresh mint
- 3/4 cup dried cranberries
- 1 lemon, juiced and zested
- 3 tablespoons red wine vinegar
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1 teaspoon cinnamon
- 1 teaspoon curry powder
- 2 teaspoons salt (omit for low-sodium salad)
- 1 teaspoon olive oil
