Banana Bread Baked Oatmeal Recipe Is Like Dessert for Breakfast

Banana bread seems to make most people happy. When I enjoyed grilled banana bread for breakfast one day, I decided to find new ways enjoy the flavors of banana bread. This quick and easy banana bread baked oatmeal was my latest find. This baked oatmeal recipe is like eating dessert for breakfast!

To make this low-sodium baked oatmeal recipe you need those coveted overripe or very ripe bananas. Other ingredients you'll need to gather are brown sugar, eggs, salt, baking powder, vanilla extract, ground cinnamon, nutmeg, milk and old-fashioned rolled oats. The ingredients mix up in one bowl and then are baked until set and golden brown. You'll swear there's a loaf of banana bread baking in your oven!

Serve this moist baked oatmeal hot, warm or cold for breakfast or brunch. It would even be delicious for dessert served hot with a scoop of vanilla ice cream on top.

  • You could add 1/2 cup of chopped walnuts, almonds or pecans into the batter before baking.
  • I didn't spray my baking dish with nonstick cooking spray and it released just fine. But if you want, give it a spray to ensure it does not stick. All pans are different.
  • Store any leftovers in an airtight container in the fridge.

Here's how to make it: 

  1. Mash the bananas in a mixing bowl. Add the brown sugar, eggs, salt, vanilla extract, baking powder, ground cinnamon and nutmeg.
  2. Stir well to combine.
  3. Add the milk and oats. Stir to combine.
  4. Pour the mixture into a 9x9-inch baking pan or similar-size baking dish.
  5. Bake in a preheated 375-degree F oven for about 45 minutes or until golden brown.
  6. Garnish with fresh sliced bananas and ground cinnamon, if desired.
  7. Serve.
