Not only that, they are delicious in so many different kinds of foods – from sweet to savory. These moist raspberry crumble bars are one way to get the most out of those plump sweet raspberries!

To make these sweet crumble bars, you will need to gather a few ingredients from the pantry and fridge. Here is your shopping list so we can get baking: old-fashioned oats, flour, brown sugar, baking powder, ground cinnamon, butter, fresh raspberries, vanilla extract, lemons for zesting and raspberry jam (double whammy of raspberry!).

Serve these raspberry crumble bars for dessert or as a sweet snack. You could heat up the crumble bars and top with them a scoop of vanilla ice cream. Heavenly!

  • If the dough is too dry in the food processor after adding the butter, drizzle in a bit of water.
  • Try this recipe with blackberries instead of raspberries.
  • Make sure the butter is cold before making the dough. Do not soften the butter.
  • Store the bars in an airtight container for up to one week. 

Here's how to make it: 

  1. Put the oats, flour, brown sugar, baking powder and cinnamon into a food processor. Blend until oats are almost ground. Add the butter and pulse until a dough forms (it will be crumbly). Press one-third of the dough into the bottom of a 13x9-inch baking pan that's been lined with parchment paper or sprayed with nonstick cooking spray. 
  2. Bake in a preheated 350-degree F oven for about 10 minutes or until golden. Remove and set aside.
  3. While the crust bakes, put the raspberries into a mixing bowl. Add the brown sugar, flour, vanilla and lemon zest. Toss. 
  4. Pour the raspberries into the baked crust in a single layer. Put dollops of the raspberry jam over the berries. Sprinkle the remaining dough mixture over the filling. 
  5. Bake for an additional 30 to 40 minutes or until lightly browned. Remove from the oven and cool completely before cutting into bars.
