Recipe Notes
- You can use ground chicken, turkey or beef for this recipe. I used ground beef.
- I added some garlic powder into the sauce. Just a couple of shakes.
- For some color, garnish with chopped fresh parsley or basil.
Here's how to make it:
- In a mixing bowl, combine all the meatball ingredients. Season well with salt and black pepper.
- Shape into 1 1/2-inch meatballs and place on an aluminum foil or parchment paper-lined baking sheet.
- Bake in a preheated 400-degree F oven for about 15 minutes or until cooked through.
- While the meatballs bake, make the sauce. Melt the butter in a skillet over medium heat. Add the garlic, thyme and crushed red pepper flakes. Cook, stirring, for 30 seconds. Add the Parmesan, sundried tomatoes, chicken broth and cream. Bring to a simmer and cook until the sauce thickens and reduces, about 5 minutes.
- Add the cooked meatballs into the sauce.
- Continue to gently simmer until sauce is to your desired thickness and meatballs are well coated. Season with more salt and pepper, if needed.
- Serve the meatballs over noodles, rice, quinoa or potatoes, if desired.
