Recipe Notes

  • For even more flavor in the gravy, stir in some of the meatloaf pan drippings.
  • Choose a dry red wine, nothing too sweet.
  • You can make the gravy the day before and reheat in a saucepot.

Here's how to make it:

  1. To make the meatloaf, combine all the ingredients in a mixing bowl. Season well with salt and pepper. Form into a loaf and place it in a loaf pan. Bake in a preheated 375-degree F oven for about 1 hour or until cooked through.
  2. To make the red wine onion gravy, melt 1 tablespoon of the butter in a skillet. Add the onions and cook until caramelized, stirring often, about 20 to 30 minutes.
  3. Add the remaining butter and flour. Stir until combined.
  4. Add the wine, beef stock, Worcestershire sauce and jam. Season with salt and pepper. Simmer over low heat until it thickens to desired consistency. Serve over the meatloaf.
