Easy Apple Cranberry Baked Oatmeal Recipe: A Festive Breakfast or Brunch by Elisa Schmitz
Apples and cranberries go together like peanut butter and jelly or peas and carrots. It’s just one of those flavor combinations (sweet and tart) that most everyone enjoys, especially during the holiday season.
This easy apple cranberry baked oatmeal recipe is loaded with tender apples and tart cranberries. It makes a festive breakfast or brunch that offers a boost of nutrition, too. So easy to prepare, and makes the kitchen all warm and cozy!

Ingredients
- 3 cups oats (I used gluten-free quick-cook oats)
- 1 cup flour (I used gluten-free flour)
- 3 ripe bananas, mashed
- 1 1/4 cups milk or nut milk (I used almond milk)
- 1 cup brown sugar
- 1/4 cup melted butter
- 4 eggs
- 2 teaspoons baking powder
- 2 teaspoons cinnamon
- 2 teaspoons vanilla extract
- dash of salt
- 2 medium apples, peeled and diced (I used honey crisp)
- 8 ounces fresh cranberries
- 1 cup chopped walnuts (optional)
Here's how to make it:
- Put all ingredients except apples and cranberries into a large bowl. Mix until well combined. Fold in apples and cranberries.
- Pour the batter into a 13x9-inch baking pan or glass baking dish that you’ve sprayed with cooking spray.
- Bake in a preheated 350-degree F oven for about 30 minutes or until golden brown. Allow to cool a bit before serving.
