For this quick and easy roasted zucchini recipe you will need zucchini, garlic powder, olive oil and freshly grated Parmesan cheese. The zucchini is simply coated in the garlic powder, olive oil and cheese, then roasted in the oven until tender. Broil for a minute or two to add some color, and your squash side dish is done. 

This is a simple vegetable side dish recipe everyone will enjoy. Serve the garlicky zucchini with chicken, pork, beef, lamb, seafood or your favorite comfort food meal.

  • 3 medium zucchini, cut into 1/2-inch thick rounds
  • 1 teaspoon garlic powder
  • 2 - 3 tablespoons olive oil
  • 1/2 cup grated Parmesan cheese

  • If you don't have Parmesan cheese, try Gruyere, white cheddar, fontina or mozzarella.

Here's how to make it: 

  1. Put the zucchini into a bowl. Add the garlic powder and olive oil. Season with salt and pepper. Toss to coat. 
  2. Put the zucchini onto a parchment paper-lined baking sheet. Sprinkle with the grated Parmesan. 
  3. Bake in a preheated 450-degree F oven for about 5 minutes. Turn the broiler on and broil for about 2 minutes.
