Recipe Notes

  • If you're not a fan of Tabasco sauce, use your favorite bottled hot sauce.
  • To make it healthier, use chicken or turkey sausage or even vegan sausage.
  • This recipe reheats beautifully. Store it in an airtight container in the fridge and reheat in the microwave.

Here's how to make it:

  1. Heat the oil in a large pot. Add the sausage, onion and pepper. Cook until sausage is brown, about 5 minutes. Add the beans, bay leaves, thyme, cayenne and water. Bring to a boil, reduce heat and cook until thickened, about 10 minutes.
  2. Remove the bay leaves. Take about one-third of the beans out of the pot and mash with a fork. Return to the pot and stir. Season with salt and pepper. Serve over the cooked rice with Tabasco sauce on the side.
