3-Ingredient Lemon Cookies Recipe: When Life Doesn't Give You Lemons

This easy lemon cake mix cookie recipe is so simple even kids can make it. Make a batch when life doesn't give you lemons. Why? Because this three-ingredient lemon cookie recipe doesn't require any fresh lemons. The cookies are made with a box lemon cake mix. Perfect!

Here is your short and sweet shopping list for these lemony cake mix cookies: a box of lemon cake mix, an egg, non-dairy whipped topping and optional powdered sugar if you want to fancy them up. The cookie batter mixes up quickly and bakes in about 10 minutes.

  • 1 box (16 ounces) lemon cake mix
  • 1 egg
  • 8 ounces non-dairy whipped topping

  • You could substitute a white cake mix for the yellow. For added lemon flavor, throw in some fresh lemon zest.
  • Store cookies in an airtight container.

Here's how to make it:

  1. Place the cake mix, egg and whipped topping in a bowl. Mix until dough is well blended and cake mix is absorbed. 
  2. Place the powdered sugar in a shallow dish or on a plate.
  3. Form the dough into round 1-inch balls. Roll each ball in powdered sugar. Place cookies on ungreased baking sheets 2 inches apart.
  4. Bake in a preheated 375-degree F oven for 9 to 12 minutes, one baking sheet at a time, until cookies are set. Cookie surfaces will appear crinkled. Do not over bake.
  5. Remove cookie sheets from the oven. Allow cookies to sit for 1 minute before using a spatula to transfer them to a wire rack. Cool completely.

Disclaimer I don't bake much. I tried this. There is no oven temperature so I guessed 325. I found the dough very hard to work with, it stuck to my hands and the spatula much moreso than to itself. My 1st tray came out with the consistency of whole wheat bread. I turned up the heat on the second to 350. These were starting to burn when I took them out but still not like the photo.

It was so dumb says make sure not to over bake but gave no oven temperature.

I’ll try baking at 350. Mine looks more like a pour batter, I used a lemon pound cake mix 🙏. I’m baking in a 8x8 instead. Fingers crossed!!
